Cocktail Friday | Rum Pineapple Whip

Having been born and raised a California girl and a frequent visitor of Disneyland, I was well-acquainted with their long-standing Dole Whip treat. However, it wasn't until I went to Disney World in Florida this year that I was introduced to a coconut rum spiked Dole Whip, which they serve in their Animal Kingdom park. I was hooked!

Not knowing their exact recipe, but having some idea what was in it, I experimented and came up with my own version of the Rum-spiked Dole Whip, and it's the perfect treat on a summer weekend.

1 8 oz tub of frozen cool whip
2 cups frozen pineapple chunks
6 oz can of pineapple juice
3 oz coconut rum (or dark rum, if you prefer)
can of spray whip cream
Maraschino cherries for garnish
Pineapple chunks or slices for garnish

Scoop cool whip into blender. Add frozen pineapples, pineapple juice, and coconut rum. If consistency is too runny for your preference, add ice and blend or put mix in the freezer for 30-45 minutes.

After pouring into your glasses, spray whipped cream to the top and add cherries and pineapple. Delicious for a warm day dessert! Cheers!
